Energy Balls Recipe

Yesterday I was baking in the kitchen.  I love to bake.  I also love fast nutritious foods that I can grab and go.  These energy balls fit the bill!  Personally, I had never measured the ingredients I use in this energy balls recipe so yesterday I did!  Just for you guys.  They’re a bit different than what I would normally make as I was out of dates.  Raisins to the rescue!!

This energy balls recipe is pretty amazing and I hope you’ll love it as much as I do.  It’s fully customizable too.  So feel free to switch out ingredients and use what you have on hand.  That’s what I do!

This recipe features orange essential oil in it.  I love to play with oils and this oil can be changed for another.  I’ve used peppermint before as well as lemon and lavender.  Totally up to you.

Ingredients:

1 cup pecans
1 cup walnuts
1 cup raisins
1 cup sunflower seeds
1/2 cup chia seeds
1/4 cup coconut oil
1/2 cup peanut flour
1/2 cup cocoa powder
20 drops orange oil

 Instructions:

In a food processor combine the pecans and walnuts and pulse until they are finely ground.

Add the sunflower and chia seeds and again pulse until finely ground.

Place the raisins in the food processor and pulse again.

Now add in the peanut flour, cocoa powder, and coconut oil plus the orange oil. I like to add the orange oil to my coconut oil before adding.

Pulse until the mixture begins to form a giant ball in your food processor.

Remove to a separate bowl.

Make mixture into 1 inch balls by rolling in hands.

Place on cookie sheet on wax paper.

Refrigerate until hard.

I store mine in a glass jar in the refrigerator so I can just grab one or two and eat them on the go. Can also be made into bars.

Last night I made a delicious new Trim Healthy Mama dish.  I call it Creamy Chicken Casserole.  It’s a THM S meal as it’s full of good for you fats.

I had some cauliflower in my fridge that was past it’s prime and some leftover chicken that needed used up.  So I decided to figure out something to put them both in.  I thought about a soup but wasn’t in the mood for a soup.  My pregnant self was craving something filling and cheesey!  So off I went in search of the cheeses I had available and the Creamy Chicken Casserole was born.

Let me tell you, this tasted like my old chicken tetrazzini recipe but without all the carbs that pasta brings with it.  This creamy chicken casserole simply melted in the mouth and left me feeling full and totally satisfied.  The family LOVED it too which is always a good thing.

Now before I post the recipe, I did have to create a sub recipe to go with it that is dairy free.  I did not have any dairy free yogurt or cream cheese so theirs was definitely not as creamy but still got rave reviews.  

First things first.  To make the creamy chicken casserole you’re going to need either two chicken breast halves or a whole chicken breast.  I used all of the breast off of one cooked chicken.  Mine was precooked which shortened my prep time.  So I’m going to assume yours is too.  If not, get to cooking it before you start this recipe.

Ingredients
  1. 1 chicken breast(both halves)
  2. 1 bell pepper
  3. 1 bunch green onions
  4. 1 garlic clove diced
  5. 1 bunch celery diced finely
  6. 1 cup bacon bits
  7. 2 heads cauliflower
  8. 8 oz cream cheese(softened)
  9. 1 cup sour cream
  10. 3 cups shredded cheese
  11. salt and pepper to taste
Instructions
  1. Start out by cutting the cauliflower heads up into bite sized pieces.
  2. Place them in a pan with water and boil until soft.
  3. Meanwhile, in a skillet saute your chicken and all the other veggies plus bacon bits.
  4. Mix together the softened cream cheese, sour cream, and half the shredded cheese.
  5. Add to this the cooked chicken and veggies.
  6. Stir in the chicken mixture to the cheese mixture to help it get all dissolved together and creamy.
  7. Drain the cooked cauliflower well.
  8. Add the cauliflower to the chicken mixture.
  9. Spread in a greased 13x9 pan.
  10. Top with the remaining shredded cheese.
  11. Bake for 30 minutes at 350 degrees F or until your cheese is fully melted.
Notes
  1. This can be made in two 13x9 pans if you don't want this to be as thick of a dish.
  2. To make dairy free simply sub dairy free ingredients such as dairy free cream cheese, dairy free yogurt for the sour cream, and dairy free cheese.

Super Moist Gluten Free Chocolate Cake Recipe

If you are anything like me you love chocolate.  Anything chocolate.  So I knew that I needed to make a delicious moist gluten free chocolate cake recipe that we could enjoy.  Let’s face it, boxed cake mixes are nice, but they can’t hold a candle to the from scratch goodness.  At least not in my mind!  I think you guys are going to love this recipe.  There is a secret ingredient to keep it moist and the icing. … it’s to die for!  Seriously.  So good!

You will need two round cake pans to get this cake perfect.  I used 9 inch rounds.  You could probably use 8 inch rounds but might have to cut the tops off the cake.

Of course you knew I was going to have to throw Good Cook in here somewhere.  I love this knife.  Yeah it’s not first choice for slicing a cake, but it was clean and available!  And well I LOVE it!

You’re going to need my Artisan Gluten Free Flour Blend for this cake.  You can probably use other flour blends, but it is the only one that I have had complete success with.  I’d love to hear what other blends you’ve made work with it!

I really don’t know what else to say about this cake other than you have to try it.  It is so good.  My family loved it.  Our roofing crew loved it.  It is definitely a must have at our house.  I’ve made it for birthdays before as well.  You’re going to want to have it on hand for every occasion even those that aren’t special!

And now, I am going to go work on perfecting my dairy free version of this cake to share with you too.  This cake is so good.  After dairy free I am working on a super yummy white cake and then maybe a strawberry.  But somewhere in there has to land a yellow one with yellow icing for a special girl with a birthday this month.  Yellow is her favorite color.  I’m also in the mood for something adventurous. . . . tomato cake anyone!  :)

Here is the perfect moist cake for all your special occasion needs and even just those days when you're craving chocolate.

For the Cake
  1. 1 cup butter
  2. 1 cup water (can sub in milk here for an even more decadent cake)
  3. 1/2 cup dark cocoa powder
  4. 2 cups organic white sugar or ground demerara
  5. 2 eggs
  6. 1 cup sour cream
  7. 1 tsp vanilla (I have used other flavorings successfully, ie mint)
  8. 2-1/2 cups gluten free flour blend(I use my own blend--link in article)
  9. 2 tsp guar gum
  10. 1-1/2 tsp baking soda
  11. 1-1/2 tsp baking powder(heaping)
  12. 1/2 tsp salt
For the frosting
  1. 1 cup butter, softened
  2. 4 cups powdered sugar(I use organic as well)
  3. 1/4 cup heavy cream plus 2 Tbs
  4. 1/2 cup unsweetened dark cocoa powder
  5. 1-1/2 tsp vanilla
  6. 1/2 cup dark chocolate chips, melted
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease 2 round pans, 9 inch preferred.
For the Cake
  1. Melt butter in saucepan.
  2. Add in water and cocoa powder.
  3. Bring to a boil.
  4. Combine the cocoa mixture and sugar.
  5. Mix to dissolve sugar and cool the mixture.
  6. Add the eggs, sour cream, and vanilla.
  7. Scrape sides of the bowl to make sure all incorporated fully.
  8. In separate bowl combine the dry ingredients.
  9. Add dry ingredients to mixing bowl.
  10. Stir slowly or mix on medium low to incorporate.
  11. Scrape down sides.
  12. Mix on high or quickly for 5 seconds.
  13. Pour half in each pan.
  14. Bake for 40 minutes or until cake tester comes out clean.
  15. Let cool in pan for 10 minutes.
  16. Transfer to wire racks.
  17. Let cool on wire racks.
For the Frosting
  1. Beat all ingredients except the dark chocolate chips and 2 Tb of heavy cream in mixer bowl.
  2. Melt the dark chocolate chips with the 2 Tb of heavy cream in a small saucepan.
  3. Mix the melted mixture in slowly until all incorporated.
  4. Add more cream if it is too thick.
  5. Generously lather on the cake!
Notes
  1. This makes a good deal of frosting and I have never been able to put it all on the cake.
  2. It is delicious!

So when I found out that Good Cook had a new bowl out for Fresh Fruit I knew exactly what I was going to use mine for.  I make a smoothie every morning after exercising.  I’m running around 6 miles every other day.  

This bowl is perfect for going and picking some fresh fruit and veggies from the garden.  Just enough for one smoothie for me!

I took my bowl out, got some spinach, some kale, some blueberries, and some strawberries.  Oh yummy!  Seriously this stuff is really good even if you don’t think so at first.

Right now this bowl is only available at Bed Bath and Beyond and not on the Good Cook website.

Oh it looks good enough to eat! or drink!

This bowl is so cool though!  It has 3 pieces.  You have a large bowl, a colander inset, and then a lid.  I love that the bowl has a silicone type ring on the bottom that helps to keep the bowl from moving around. I’m loving this for using in my garden picking!  It is exclusively available at Bed Bath and Beyond though so don’t go looking for it on the Good Cook website!

It’s called the Profreshional Fruit Bowl and it not only helps to keep the fruit fresh, but it’s super easy to separate the fruit from the juice when you need it.  The bowl is quite a bit larger than you think it might be.  I loved how large it truly was and how much fruit could be placed in it.

  1. handful of kale
  2. handful of spinach
  3. half a dozen strawberries
  4. large handful of blueberries
  5. scoop rice protein or whey protein
  6. one half banana
  7. one half cup plain yoghurt
  8. one half avocado
Instructions
  1. Get out your blender.
  2. Put all ingredients in the blender.
  3. Blend or Puree until fully mixed.
  4. Pour into mason jar.
  5. Enjoy!
Notes
  1. If this seems too thick to you simply add some almond milk. I tend to not add the milk as I like a really thick smoothie.

Gluten Free Made Simple with Tastefully Simple

As you all know(or will know now) my whole family is gluten free.  Well, the family in my house which includes 9 kids, 2 adults, and 2 grain free dogs, plus a cat but she doesn’t eat gluten free.  We also have several family members who are dairy free.  I was thrilled to get to review some of the gluten free line from Tastefully Simple.  I received a mix for beer bread and a mix for Cinnamon Apple Cake Mix.  Happy girl here!

Because I have 9 kids and we’re homeschooling and living on a farm sometimes I wish that I could create a line of food called Gluten Free Made Simple.  Now I realize I don’t need to because that is just what Tastefully Simple has done!

Beer bread is a fond memory for me.  My mom made it a lot growing up, which as a child I found funny as neither of my parents drank at all.  Of course, you don’t have to use beer to make this bread.  We don’t drink either.  I used a can of Black Cherry Zevia in my bread.  It gave it a sweet taste.  Fruity and bubbly in your mouth.  Maybe not, but it was divine.  I loved the subtle fruity flavor that it had from the soda.  I used the mix as the directions stated except for using the soda instead of the beer.  Because of that, it did not have a yeasty flavor at all.  I had wondered how it would taste.  It was so good!  Definitely on my to buy list in the future.  We ate this sliced with butter or without depending on allergies, to go along with some homemade veggie soup.  Perfect!

The other mix we tried was the Cinnamon Apple Cake Mix.  So I totally screwed with this one to make it my own!  All you have to add to it are eggs and apples.  Well, I didn’t have any apples to add so I added some applesauce, a pinch of poppyseeds, some raisins, a dash of cinnamon, nutmeg, allspice, and cloves.  I made it in an 8×8 glass pan as well.  I topped with fresh coconut whipped cream and enjoyed.  So so so good.  Definitely going to have to make this one again.  Besides being gluten free it is also kosher.

Tastefully Simple’s gluten free line includes six different mixes.  Besides the above two that I received they also have a vanilla bean pound cake, fudgy brownie(MUST TRY–love chocolate), coconut lime cake, and a gluten free pizza crust plus sauce mix.   

I personally want to try everything else in their line and just wish their sauces were gluten free too.  I’d love to try the sweet mesquite on chicken but it contains wheat.  Too bad for me so someone else needs to try it and tell me what it tastes like!
