Gluten Free Dairy Free Cornbread Recipe
We love cornbread with our chili or Sutler’s Beans as well as many other meals. I recently found the perfect cornbread recipe for us! It started with this recipe from Gluten Free Mommy and then I did a few tweaks as per normal for me! Make sure to check out her recipe and mine!
My recipe is doubled. I will be sharing my recipe which makes two 9 inch round pans.
Ingredients:
2 cups brown rice flour
1-1/2 cups gluten free corn flour(Bob’s red mill sells one)
2 Tb baking powder
4 large eggs, beaten
2 cups milk(almond milk works well)
1/2 cup coconut oil, melted
Preheat oven to 350 degrees Fahrenheit.
Grease two 9 inch round pans.
Mix together the dry ingredients while the coconut oil is melting. Mix together the coconut oil, milk, and eggs. Pour them into a well in the dry ingredients. Mix together well.
Pour half of the batter into each pan and bake for 20 minutes or until the toothpick comes out clean.

I have yet to find a gluten free corn flour that I can buy in bulk. We really like the Bob’s Red Mill one and just wish they’d make their GMO free one gluten free as well.

i halved this recipe…….did not turn out very good! 1 Tablespoon of baking powder made it taste chalky. I would recommend not halving it!
