Apple Crisp Bread

Here is the original recipe handed down to me from my Mom, it’s a family recipe.  I will put in brackets what I substitute with.

1-1/4 c. oil(I use 1/2 cup applesauce and 3/4 cup coconut oil)
2 c. sugar(I use 1 cup demerara)
2 eggs
2 tsp. vanilla
Beat these ingredients together well.

1 tsp. baking soda
1 tsp salt
1 tsp cinnamon
3 c. flour(I use 3 cups of my all purpose gluten free flour blend)
Sift these together and add to the first mixture. Add in 3 c. chopped raw apples and 1 c. nuts(optional)

Makes two loaves of bread. Bake in a 350 degree oven for 50-60(with gluten free flour it takes between 60-80) minutes, or until tester comes out clean. Freezes well.

I love to double this recipe and make 4 loaves at a time.  The dough will be thick when you make it.
